Roasted Baby Carrots

Ingredients
4 T olive oil1 T fresh thyme, chopped2 cloves garlic, minced1/2 t salt1/8 t black pepper3 T granulated sugar6 cups baby carrots
Directions
Preheat oven to 425
Spray a rectangular baking pan with cooking spray
Mix all the ingredients except the carrots in a large mixing bowl
Then toss mixture with t he carrots
Spread carrots in a a pan
Bake loosely covered for 40 minutes
Remove the cove and bake for another 15 minutes
Stir occassionally until carrots are tender
