Midwestern Ham Chowder

Ingredients
6 Med russet potatoes scrubbed & diced8 stalks celery1 med onion diced4 Med carrots chopped4 Cups fresh corn5 cups of lean ham1 stick butter8 TBS EVOO1 Cup unbleached flour4 cups 2% fine shredded cheddar3 cups Extra sharp fine shredded cheddar12 cups water8 cups of 1% milkNatures Seasoning SaltPepper
Directions
Dice all veggies and boil in 12 cups of water for 10 minutes, add diced ham. Melt one stick butter and 8 TBS EVOO add flour and whisk for a paste and slowly add milk and cook until thickened whisk in cheese. Add cheese mixture to veggie mixture. Simmer, top with small amt of cheddar cheese. Serve this chowder with Pumkin Spice Muffins for a complete and nutritious dinner. Enjoy !!
