Paleo Coconut-Almond Mini Muffins

Ingredients
1/2c almond butter1/2c sliced almonds1/2c almond milk (Silk, Vanilla)1/2c (8T) shredded unsweetened coconut1 egg (cage-free omega-3)
Directions
Mix all ingredients in a bowl.
Divide mixture into 18 mini muffin cups.
Bake at 400 degrees for 10-15 mins. (Mini muffin cups placed on a baking sheet took 13 mins in my gas oven; original recipe for standard-sized muffins states 15 mins.)

Suggested add-ins: Blueberries, cinnamon, honey, vanilla, additional coconut (I only used half of what was recommended).

Serving Size: Makes 18 mini muffins (or 6 standard muffins)
