2 lbs Italian sausage1 tsp black pepper1 medium onion, chopped4 oz can/jar of mushroooms2 jars (23.5 oz) Prego spaghetti sauce2 tsp. Italian seasoning1 tsp garlic powder14.5 oz can diced tomatoes with green chilies1 can original rotel 2 cans (6 oz each) tomato paste1 lb cavatelli noodles (large shells)24 oz mozzarella cheese, shredded
Crumble and brown sausage, pepper, and onion in skillet. Drain grease. Put sausage mixture, mushrooms, spaghetti sauce, Italian seasoning, garlic powder, tomatoes, and rotel in a large crock pot and simmer for 4-6 hours. Add tomato paste to thicken.
Cook noodles according to package directions; drain. Mix with sauce. Top each pan with 12 oz of mozzarella. Bake at 350 for about 30 minutes-or until cheese is melted and starting to brown.
This can be made ahead and refrigerated or frozen. If you are making ahead, bake in the oven for about 30 minutes, then add cheese to the top and bake until the cheese is golden.
