Shred, Head, Sausage, and Bread

• 1 small head of green cabbage, shredded• 1 yellow onion, julienned• 1 T sugar• 1 T kosher salt • 1/2 package smoked beef sausage• 2 T butter• 2/3 cup bread crumbs• 1 T mustard• 1 t caraway seeds • 1 T black pepper
Salt and sugar a large pot of water, set to boil.
Slice the sausage into long strips, and add to a large saute pan over medium-high heat. When the sausage has started to sizzle, add the onion. Cook until the onion has started taking color, which should be about when the water hits a boil.
Add the cabbage to the water, and cook for two minutes exactly. While the cabbage is cooking, add the butter, caraway, mustard, and black pepper to the onions and sausage. Drain the cabbage, and add to the dressing. Toss with tongs to coat.
Serving Size: Serves 4 as a main course
