Wheat Berry and Chicken Casserole

2 cups wheat berries1 -10.75 oz can cream of mushroom soup1 - 14 oz can vegetable broth1 cup diced potatos1/2 cup diced carrots1/2 cup diced bell pepper1/2 cup diced onions1 TBSP parsley3 cloves garlic, chopped1 TBSP cilantro1 1b of skinless boneless chicken breast1 cup lowfat cheddar or colby cheese
Preheat oven to 350 degrees
Mix wheat berries, cream of mushroom soup and vegetable broth in a 13X9 casserole dish.
Spray frying pan with cooking spray.
Chop chicken and fry in pan. Add onions cook cook until onions are transparent. Add potatos, carrots, bell peppers, parsley, garlic, and cilantro. Pour chicken mix into casserole dish with wheat berry mix. Top with cheese and cover with foil.
Bake for 1 - 1.5 hours until wheat berries are soft.
Enjoy.
