Higher Protein Pizza Dough II

Ingredients
1.5 cup all purpose flour1.5 cup white whole wheat flour.5 cup whole grain buckwheat flour.5 cup whole soy flour2 tablespoon vital wheat gluten2 tablespoon canola or olive oil2 teaspoon bakers yeast2 tablespoon sugar1.5 cup warm water2 teaspoon salt
Directions
1) dissolve the sugar in the warm water. add the yeast and wait 10 minutes for the yeast to activate and foam.
2) add all the dry ingredients and mix with a wooden spoon.
3) when the mixing no longer helps, knead the mixture into a dough (should take less than 5 minutes.
4) let dough rise and at least double in size before using.
5) flatten into pizza crust and use as usual.

Serving Size: make 2 large pizza pies
