Sweet Potato and Spinach Cake

Ingredients
3 Eggs, largeSelf-raising flour, 170 g*Potato - Sweet, raw, 6.5 ozSpinach, fresh, 85 grams *Cathedral city mild cheddar, 84 gram*Milk (full fat)110ml*Canola Oil, 0.45 cup*Coriander, ground, 1 tspSalt, 1 dash
Directions
peel sweet potato and grate coarsely

chop spinach leaves coarsely

grate cheese thinly

In a bowl, mix together flour and eggs

Add oil first, then mix, then milk and miix

Add vegetables and cheese and mix

add salt and coriander powder (yiu cab add other spices to taste if so desired)

pour batter into a loaf pan (8X3) and cook at 350F/gas mark 4 for 50 minutes.

Let cake cool before removing from tin
