1/2 cup oat flour1/2 cup all purpose flour1/2 tsp baking soda1 Tbsp baking powder1/4 tsp salt1 cup mashed bananas (about 3 overripe)1/4 cup sugar1/4 cup fat free skim milk1 egg1 tsp vanilla extract1/2 tsp ground cinnamon
Whisk oat flour, ap flour, soda, powder and salt together in large bowl. In separate bowl, mix bananas, sugar, yogurt and egg. Pour into the dry ingredients and add extract and cinnamon. Scoop into muffin tin that has been sprayed with nonstick cooking spray. Bake at 400 for 12 minutes or until toothpick test done. Makes 15 muffins.
