Southwest Chicken Soup - 1 1/2 c serving - Low salt

Ingredients
12 oz chicken breasts, cooked, chopped1 sm onion - diced3 cloves garlic - mincedI lg celery stalk - chopped1 pepper - chopped (I use red, orange and yellow)1 tbsp cumin1 tbsp olive oil1 14 oz can tomatoes (I use no salt added)3 cups vegetable stock - no saltjuice from 1 lime (approx 1 tbsp)1 cup cooked basmati ricehot sauce and pepper to taste
Directions
Saute onion garlic, celery and peppers in the olive oil, about 5 minutes.
Add chicken & cumin and cook for another 5
Add remaining ingredients, and simmer for an hour or two.
Makes 5 large 1 1/2 cup servings - of very thick soup!
