Deep Fried Cod

Ingredients
1 tbsp. dill weed1 tbsp. Aji Nori Furikake1 tbsp. coriander1 c. gluten free flour1 c. oatmeal flour1 egg whisked with 2 tbsp. water (egg wash)20 oz. cod fish cut piecesOil for frying
Directions
Steam cod in boiling water for 30 seconds on each side (I keep turning the cod to test the texture and keep my eye on the flakiness). Put seasonings into flour. Dip each piece of cod in oatmeal flour, then egg wash, then seasoned flour. Place a piece of coated cod in hot oil and fry for four seconds on each side or until the coating is hard. Remove promplty from oil and salt. Repeat with all pieces of cod.

Serving Size: Makes 7-8 servings of approximately 4 oz. of fish.
