Couscous Tabbouleh

Water, tap, 3/4 cup Couscous, 3/4 cupSalt, 3/4 tsp Fresh Tomatoes, 1 cup, dicedCucumber (with peel), 1 cup, dicedFresh Mint, 1/4 cup, choppedLemon juice, 1/4 cupOlive Oil, 1 1/2 TbspPepper, black, 1/2 tsp
1. In a microwave safe bowl, heat water to bowling in microwave on High, 1 1/2 to 2 minutes. Remove bowl from microwave, stir in couscous and 1/4 tsp salt; cover and let stand until liquid has been absorbed, about 5 minutes.
2. Fluff couscous with fork. Stir in tomatoes, cucumbers, mint, lemon juice, olive oil, pepper and remaining 1/4 tsp of salt. Serve at room temperature or cover and refrigerate for up to 6 hours.
