Simple veggie soup w/tomato

Ingredients

Directions
Saute onions and garlic in soup po with 2tbs oil. Chop fingerling potatoes into bite size pieces. After garlic and onion begin to sweat, add potatoes directly to pot. Add oregano and cumin to taste. Add mushrooms to pot. Saute five more minutes. Add one large can of chopped tomatoes. Turn on high, wait for boil. Add can of black beans, drained, one chopped zucchini, frozen peas, and as much cabbage as you like. Add one carton of chicken stock and two cups water. Bring to boil again. Simmer, add salt and pepper to taste.

Serve with buttered bread and a bit of cheddar cheese on top.
