Quinoa Salad w/ Edamame

3/4 c. dry quinoa- Inca Red, cook as directed1 c. shelled edamame, cooked as directed and drained1 Mango, diced 1/4 c. diced red onion1/2 c. diced red pepper2 T. shredded coconut1/4 c. cilantro, finely chopped2 T. light Balsamic VinaigretteJuice of 1 lime2 T. Orange JuiceSalt and Pepper to taste
1. Cook Quinoa as directed and let cool.
2. Cook Edamame as directed, drain and cool. Once cooled put into bowl.
3. Add mango, red onion, red pepper, cilantro and coconut to edamame.
4. In small bowl, whisk together balamic vinaigrette, lime juice, orange juice, salt and pepper. Add to edamame mixture.
5. Add edamame mixture to quinoa. Chill for 30 minutes before serving.
Serving Size: Makes 8 1/2 cup servings
