Somersize Southwestern Eggs-in-a-Pan Casserole

Ingredients

1 pound choizo sausage, casing removed and meat crumbled. (may substitute if you can't find chorizo) 1 large onion, chopped6 ounces mushrooms, sliced, about 1 cup1 cup sour cream6 large eggs1 cup shredded cheddar cheese3 tablespoons cilantro, choppedSalt and freshly ground pepper(not calculated into nutritional info) 1 package Somersize Salsa Dip Mix, or 1 cup drained fresh salsa
Brown sausage in a large skillet, about 5 minutes
Add onionand cook for 5 more minutes
Add mushrooms
Cook for an additional 5 minutes
Blend dip mix and sour cream together
Add to sausage mixture
Bring mixture to a simmer, then crack 6 eggs on top.
Cover pan and cook on low heat for 8 minutes.
Add shredded cheese, replace cover, and cook for 4 minutes more.
Salt and pepper to taste.
Sprinkle with cilantro and serve.
