Apple Cinnamon Loaf / Cake

Ingredients
***IN A LARGE MIXING BOWL, MIX:***~ 4 cups Apples, chopped / diced~ 1/2 cup Canola Oil~ 2 Eggs~ 2 tsp. Vanilla Extract~ 2 cups Granulated Sugar***IN ANOTHER BOWL, MIX TOGETHER:***~ 1 cup Flour, all-purpose (white)~ 1 cup Flour, Whole Wheat~ 2 tsp. Baking Soda~ 2 tsp. Cinnamon, ground~ 1/2 tsp. Salt
Directions
1. Add contents of the second (dry) ingredients bowl to the first (apple mix) bowl. Stir to incorporate.
2. Spray a bundt pan OR two loaf pans with non-stick spray, and dust lightly with flour. Either pour the batter into the one bundt pan, or divide it equally between the two loaf pans.
3. Bake in a pre-heated 350F oven for 50 - 60 minutes, testing for doneness after 50 minutes.
4. Cut the cake into 16 pieces, or each loaf into 8 slices each (16 total). Enjoy! :)
