Low Fat Scalloped Potato

Ingredients
1 c. skim milk2 tsp. cornstarch1/4 tsp. salt1/4 tsp. pepperNon-stick spray coating2 lg. potatoes1/4 c. chopped onion2 tbsp. grated Parmesan cheese
Directions
For sauce, in a small saucepan stir together milk, cornstarch, salt and pepper. Cook and stir over medium heat until thickened and bubbly. Remove from heat; set aside.

Lightly spray the sides of a 1 1/2 quart casserole dish with non-stick coating. Peel potatoes and slice very thin. Layer half the potatoes and half the onion into the casserole. Repeat layers of potatoes and onion. Pour sauce over potato mixture. Sprinkle with Parmesan cheese.

Bake, covered, in a 350 degree oven for 40 minutes. Uncover and bake 10 to 15 minutes more or until potatoes are tender. Makes 4 servings.

    Easy to make, used shredded romano, but otherwise stuck to the recipe. The taste was mild, considering the onions, and the potato slices were evenly tender. As a side dish it served up as 6 good-size portions. - 9/24/11

    Really easy, delicious recipe! I love that you used corn starch instead of flour since I can't have wheat gluten :) I did add some low-fat cheddar to this dish and my family loved it :) - 1/8/11
