Crock Pot Chicken Minestrone Soup

3 medium potatoes peeled and diced2 medium carrots peeled and diced1 medium onion chopped3 celery stalks diced1 medium zucchini washed and diced1 15oz can diced tomatoes in juice1 15oz can red kidney beans rinsed and drained1 1/2 lbs chicken breast tenders (raw)1/2 tsp poultry seasoning1/2 tsp crushed garlic1 tsp dried basil1/2 tsp dried oregano1/2 tsp red chili flakes1 box container of low sodium chicken stock (3-4 cups)salt and pepper to taste
Place first 15 ingredients in crock pot. Pour enough chicken stock over it to gover all ingredients. Cook on high for 5-6 hours or on low for 8 hours. Remove chicken and shred with 2 forks. Stir in shredded chicken and serve in bowls with parmesan cheese and rolls.
