Lemon Soup

Ingredients

2 large raw carrots2 cups of white, long grain rice1/4 cup of olive oil1.5 - 2.5 cups of lemon juice10 cups of water3 chicken boullion cubes3 potatos (medium-large)
Add water to large pot. Turn stove on medium heat.
Add 3 chicken boullion cubes, let dissolve.
Add olive oil.
Add 1.5 cups of lemon juice.
Cut up and add carrots.
Cut up and add potatos (small pieces are fine)
While you are doing this, in another small pot cook 2 cups of rice. When it is cooked, add it to the soup.
Add garlic powder (I use at least a handful), salt, pepper, parsley, and more lemon to taste. I like lemon a lot, so I usually add 2 1/2 cups to my soup.
Cook until potatos and carrots are tender, and then serve.
You can also add leftover pieces of chicken / breast. Makes a delicious meal when eaten with a pita.

I love this recipe, it's so low in calories and tastes good. I added chicken to mine and ate it with crackers. I also added extra lemon because I LOVE lemon, however, if you don't like lemony soup then stick with what the recipe says (or less).
