Sweet Potato Veggie Burger

Ingredients
Ingredients3 cups baked sweet potato cubes2 cups spinach1 carrot, cut up into pieces1/4 cup whole wheat flour1/4 cup oatmeal 1/2 cup chickpeas2 tsp. basil1 tsp. sea salt1/2 tsp black pepper1 tbsp. lemon juice2 cloves of garlic1/4 tsp. baking powder
Directions
Preheat oven to 400 degrees. Throw all of the ingredients into a food processor, except for the flour and oatmeal. Pulse in the food processor until well blended. Remove ingredients and place into a bowl. Add the flour and oatmeal. Place on a greased sheet and bake for 25 minutes, flipping at around 12 minutes. Broil for an additional 3-4 minutes to create a crispy crust.

    Do you use the skin from the sweet potato?
    Do you cook the sweet potato first/peel it and then blend it with the other ingredients or do you cut it up raw with the skin and blend it altogether with everything? - 3/31/13
