3 oz fish or seafood of your choice.1 med. tomato (chopped)2 C fat free broth (I used chicken broth)2 - 3 cloves minced garlic1 bay leaf1 tsp dehydrated minced onion1 tsp parsley1/4 tsp oregano1/4 tsp basil1/8 tsp rosemary1/8 tsp fennel seedssalt and pepper to tastetabasco
Combine minced onion, parsley, oregano, basil, rosemary, and fennel seeds in food processor or grinder. Grind
Add seasoning and all other ingredients except for fish and tabaco in saucepan.
Bring to a boil. reduce heat, cover and simmer for 20 - 30 min.
Add fish and return to boil.
Reduce heat, cover, and simmer 5 - 15 min.
Remove bay leaf. Top with a few dashes of tabasco just before serving.
