Greek Lentil Soup

Ingredients
2 cups dried lentils5 cups water5 cups beef, chicken or vegetable bouillon (as prepared)2 cups chopped carrots5 stalks chopped celery4 small chopped potatoes1 onion, chopped2 T Olive OilSalt/pepper to tasteRed Wine Vinegar2 bay leaves
Directions
Combine prepared bouillon, water, lentils, vegetables, olive oil, and bayleaf on stove or in crockpot.

On stove, simmer for an hour or more. Soup tastes best after lentils have started to break down.

In crockpot, cook on high for 3-4 hours or low for 5-6 hours.

Pour a tsp or two of vinegar over soup before serving. Tastes great with hot sauce too.
