Tuna Burgers

Ingredients
2 lbs. fresh tuna finely chopped2 tbs. Dijon mustard2 tsp. chipolte pepper puree1 tbs. honey2 tbs. canola oil2 green onions thinly slicedsalt and pepper
Directions
Combine the finely chopped tuna, 2 tbs of dijon mustard, chipotle puree if desired, honey, oil, and green oinions in a large bowl and season with salt and pepper. Shape ground tuna mix into 8 round uniform patties about 1 1/2 inches thick. Refrigerate for 30 minutes; the burgers must be very cold to hold their shape with cooking. Grill 3 minutes a side, baste with pineapple jam if desired. May also be cooked about 4 minutes on a Foreman grill. Serve with buns and salsa if desired.
