Strawberry Vinegarette Dressing

Ingredients
2/3 cup sliced strawberries 1/4 cup balsamic vinegar 1/2 shallot, chopped 2 teaspoons fresh thyme leaves 1 1/4 teaspoons Dijon mustard 1/4 teaspoon ground black pepper 1/4 cup of water
Directions
Combine all ingredients and 1/4 cup water in a blender and blend until very smooth.

Makes 1 heaping cup!

    Good flavor but I think it needs less water or no water. It was very watered down but I love the idea behind it and will make again without the water - 8/3/11
