Creamy Chicken & Spinach Casserole (with rice)

Ingredients
2 chicken breasts chopped3 cups rice2-3 cups chopped fresh spinach1 cup chicken broth1 can cream mushroommustard (sweet & spicy kind) (enough to coat chicken)1 tbsp crushed garlicpepperground garlic1/4c parmesan cheese1/4c bread crumbs
Directions
marinate chicken breasts in mustard & about 1 tbsp crushed garlic for aout 20min

partially cook chicken & rice (seperatly)

drain excess water from rice

mix chicken, rice, & spinach & season with pepper & ground garlic (NO SALT!) & HALF of parmesan cheese

put in baking dish

Mix canned soup with broth

pour soup mixture over food

mix well

add more broth if needed

bake for 20m then sprinkle remainder of cheese & bread crumbs on top

Bake another 5-10m - until crunchy

let stand about 5-10m before serving
