Potato Salad with a Veggie Twist

Ingredients
1 small baked potato, cubed2 tbsp chopped chives or green onion.25 cup snap peas, diced30 g ham, diced2 tbsp balsamic vinegar.5 tsp olive oilfield greens, 1 cup
Directions
Toss together and eat. If preparing to take for lunch, layer ingredients, beginning with chives, tomato, salt & pepper, snap peas, vinegar & oil, potatoes, then lettuce. Toss just before eating.

Serving Size: Makes one generous bowl, enough for a light meal.
