Spicy Chicken Tortilla Soup

Ingredients
Directions
1 tbsp olive oil2 chicken breasts1 medium onion (chopped)1 medium green bell pepper (chopped)2 cloves garlic (minced)1 packet reduced sodium taco seasoning2 14.5 oz cans reduced sodium chicken broth1 cup spicy salsa (I prefer fresh cilantro salsa)1 cup frozen yellow sweet corn1 can evaporated milk
Heat olive oil in a stock poot on medium high
Brown chicken in the oil
Remove chicken and set aside
Saute green pepper & onion in the same stock pot until onions just start to become translucent
Add garlic, satue for another 3 minutes
Cut chicken up into chunks of shredd
Add the chicken back to the stock pot
Add chicken stock, salsa, and frozen corn
Simmer for 25 minutes
Add evaporated milk
Heat to warm
You can garnich with shredded cheddar cheese, sour cream, tortilla chips or green onions, but those do add calories!!
