1 lb chicken breast1 packet italian dressing mixred onion - to tastebell pepper - to taste3 black olives2 tsp dijon mustard1 small carrot2 cups lentils6 cherry tomatoes2 cloves garlic.
TO MAKE SCHMALTZ:
Toss 1 lb. chicken breasts in italian dressing mix. Put in baking dish, cover and cook chicken breasts in a 350 degree oven til done. Reserve juice. That is the schmaltz for this recipe..
Boil lentils and a bay leaf in water just enough to cover lentils for 20 minutes.
Chop all ingredients except for schmaltz and dijon.
Drain lentils. Add schmaltz and dijon. Toss with the rest of the ingredients.
Serve with the chicken from the schmaltz recipe
EAT.
