Garlic Cheese Mashed Potatoes

Ingredients
2 Med. Potatoes2 Cloves Garlic , minced1/3 C Nonfat Milk1 Tbsp Margarine1/4 C Parmessan Cheese or hard cheese of your choice6 Sprigs Parsley, choppedBlack Pepper to tasteSea Salt to taste
Directions
Clean and rinse potatoes. With skins on dice and place in boiling water till fork tender. Drain and reserve 2 tablespoon of water. Add milk, margarine, salt and pepper and mash. Adjust the amount of water you add back to the creaminest you want. Fold in cheese and parsley.
