Frijoles Borrachos (Drunken Beans)

Ingredients
1 lb. Pinto Beans½ Onion Sliced2 Cloves Garlic mincedSmall piece of salt pork chopped6 cups water1 ¼ tsp. of salt4 strips bacon1 cup canned tomatoes3 Chile’s Serrano’s finely chopped2 large sprigs Cilantro 1 Carta Blanca Beer (any kind will do)
Directions
Put beans, onion, garlic and pork into large heavy pot. Add water and bring to a rolling boil. Reduce heat, cover and cook gently for about 2 hours adding boiling water as needed. Add salt and cook uncovered for about 15 minutes.

Cut bacon into small pieces and fry until slightly browned. Add Tomatoes and rest of the ingredients. Cook over a higher heat for 10 minutes. Add beans and cook uncovered on low for 15 minutes. Serve hot.
