Scrambled Eggs w/ Radish greens and bacon

2 lg eggs4 lg egg whites1 bunch radish greens2 slices bacongarlic powder1 tsp olive oil2 oz cheese curds w/ dill
Prep: Wash radish greens and dry thoroughly. Slice to 1/2 inch slices. Cook bacon in microwave between paper towel sheets for 2 minutes at HIGH; dice. Slice cheese curds to 1/4 inch slices. Beat eggs and egg whites in a medium bowl.
Cook: Heat olive oil in a large skillet. Add greens and garlic and cook until greens are wilted. Add bacon and cheese curds. Pour eggs over mixture and allow bottom to cook. Continue cooking and stirring until eggs are just wet.
Serving Size: Makes 2 servings
