Gingered Fish, Mushroom, and spinach soup

Ingredients
2 cups Mushrooms - sliced2 TBSP of oil (blended)3 Scallions2 Cloves of garlic2 tbsp of ginger7 cups of Vegetable, fish, or chicken stock1 TBSP of vinegar2 TBSP of Soy sauce1.5 lbs of white fish such as halibut, sea bass, or roughy cut into cubes6-8 oz of spinach, choppedSalt and pepper to taste
Directions
Heat oils, cook scallions, garlic, and ginger until soft. Add mushrooms, cook another 3 mins. Add stock, vinegar, and soy sauce. Boil, reduce heat, simmer about 5 mins. Add fish, spinach and simmer for another 4 mins. Salt and pepper to taste.
