Balsamic Chicken with Whole Wheat Penne Pasta

1 red onion, halved and sliced4 boneless skinless chicken breast tenderloins2 tbsp balsamic vinegar1/4 cup sundried tomatoes (dried, not packed in oil)3 oz. dry whole wheat penne pasta, cooked according to package directions1/4 cup shredded parmesan cheese
Heat skillet over medium heat, coat with olive oil cooking spray. Add the onion and cook until caramelized, about 15 minutes. Remove the onions from the pan and set aside. If necessary, coat the pan with more cooking spray and then add the chicken breast tenderloins and sear lightly about 1-2 minutes on each side. Add the balsamic vinegar and 1 ladle of water from the cooking pasta. Mix the onions back into the pan and add the sun-dried tomatoes. Reduce the pan to low and continue cooking for 5 minutes until the chicken is cooked through. Remove from heat, mix in the cooked pasta and parmesan cheese. Serve immediately.
