Cottage Cheese 'Blintz' Pancakes

Ingredients
1 cup 2% cottage cheese1/2 cup oatmeal, ground up5 egg whites2 tbsp applesauce2 tsp ground flaxseed1 tsp cinnamon1 tbsp splenda
Directions
Grind oatmeal to powder.
Place cottage cheese in medium bowl and blend with hand mixer until smooth.
Add rest of ingredients including oatmeal and blend well.
Cook over medium heat using PAM spray between each pancake.

    This recipe is great. I did not want high fat like egg yokes or flour. N0 applesauce so I grated half an apple Added cinnamon and instead of splenda I used approx. 1-2 tsp of honey which make them a little crispy around the edges. Froze them for snacks. Thanks for a great recipe! - 5/25/14
