Tasty Low Fat Low Cal Whole Grain Cran-Banana Walnut Muffins

Ingredients
Dry Ingredients1 cup whole wheat flour3 tsp baking powder1/2 tsp baking soda1/4 tsp salt1.5 tsp cinnamon1/4 tsp nutmeg1/4 cup brown sugar2 tbsp ground flaxseed1/2 cup whole oats, quick cook (I use steel cut oats)Wet Ingredients1 cup mashed bananas2 egg whites1/2 cup skim milk1 tbsp vanilla extract.33 cup walnuts, chopped.33 cup dried cranberries
Directions
Soak oats in skim milk for 15 minutes

Preheat oven to 375 degrees
Spray muffin pan with nonstick cooking spray or line with paper baking cups.

Add mashed bananas to oat mixture along with applesauce and egg whites. Mix

Mix first 8 dry ingredients in separate bowl.

Add banana-oat mixture to dry ingredients. Mix and fold in Vanilla, walnuts and cranberries. Spoon into muffin pan. Bake for 18- 20 minutes or until toothpick inserted in center comes out clean. Let cool before serving.
