Rex Tofu, Mushrooms, Bok Choy Stir Fry

Ingredients
*Bok Choy, raw-shreaded, 10 cup Carrots, raw, 1 carrot (7-1/2") Mushrooms, fresh, 2 cup, whole Onions, raw, .5 cup, chopped (remove)Tofu, firm, 1 block Corn Starch, 20 grams (about 3-4 heaping TBSP)Sauce:Sherry, dry, 2 fl. oz Thai Chili Sauce, 2 tbsp *Kikkoman Lite Soy Sauce, 2 tbsp Rest of Corn Starch not used to dust tofu
Directions
Dust tofu with cornstarch, fry and drain on paper towels. Pour out oil and wipe pan, stir fry veg, add tofu back in, pour sauce over and serve with rice.
