2 tbsp diced red bell pepper2 tbsp diced green onion2 chicken breasts, cooked & shredded1/2 cup frozen spinach, thawed & drained well1/2 cup frozen corn kernels1/2 cup black beans, rinsed & drained2 tbsp diced jalepenos1/2 tsp cumin1/8 tsp salt1/2 tsp chili powderdash ground cayenne pepper1 cup shredded colby jack cheese7-8 whole wheat tortillastoothpicks
cook onions & red pepper until tender. add chicken, remainder of veggies, spices and cook for 5 minutes. stir in cheese and allow to melt.
spoon approx. 3 tbsp of mixture into each tortilla and roll like a little burrito, securing with a toothpick. place seam side down in baking dish coated with cooking spray and bake @ 450 for 15-20 minutes. serve with guacamole and/or sour cream.
