2 cups of sweet potatoes - chopped2 cups raw Oats1/2 cup raw coconut flakes1/2 cup pecans - chopped2 tbsp coconut concentrate1/3 cup coconut oil2 tbsp cinnamon1 tbsp vanilla2 cups apples1/2 cup coconut crystals1/2 cup raisinsServed after oatmeal is cooked.4 cups of yogurt4 cups of blueberries
Make coconut milk by adding 1 cup warm water to the coconut concentrate mix until smooth. ( I mix in my magic bullet). Warm the coconut oil to liquid form.
Mix all the ingredients together add in the coconut milk and oil. Place in a large glass casserol dish and cover with foil. Bake at 350 for 20 minues. Top with the raw yogurt and blueberries.
Serving Size: This makes 20 1/2 cup servings. You can freeze in individual serving sizes and use each morning.
