Lemon Tarragon Wheat Couscous Salad

- 1 box plain wheat couscous (I use Near East brand)- 1 orange bell pepper – diced- 1 yellow bell pepper - diced- 2 stems of green onion – sliced thinly- 1 bag sundried tomatoes- 2 tsp. fresh tarragon – minced- 6 tbsp. Wegmans lemon vinaigrette
1. Prepare couscous to box directions. Let cool to room temperature.
2. In a large bowl, combine cooled couscous, peppers, green onions, and sundried tomatoes. Add vinaigrette and combine well.
3. Store in refrigerator. When ready to serve, splash with a small amount of dressing to freshen up the taste!
