Scallops N Mushrooms (by Mr Food)

Ingredients
1/4 cup butter1/2 pound fresh mushrooms, thinly sliced2 garlic cloves, minced10-1/2 ounces low sodium chicken broth1 medium head of broccoli, cut into small florets1/2 small red bell pepper, diced1-1/2 pounds bay scallops3 tablespoons cornstarch2 teaspoons lite soy sauce
Directions
In a large skillet, met butter over high heat. Add mushrooms and garlic and saute 2 to 3 minutes, or until tender.

Reserve 1/4 cup chicken broth. Add broccoli, bell pepper, and remaining chicken broth to skillet; mix well. Reduce heat to medium adn cook 4 to 5 minutes, or until broccoli is crisp tender.

Add scallops and cook 1 to 2 minutes, or until scallops are firm and white.

In a small bowl, combine cornstarch, soy sauce, and reserved chicken broth until smooth. Stir into skillet and cook one minute, or until thickened. Serve immediately.

    I liked it, used asparagus instead of broccolli. Only needed 1/2 the cornstarch; would have been too thick if i used it all - 6/13/16
