Falafel & Quinoa Salad

1/4 cup dry quinoa1/4 cup water1 cup shredded cabbage1 cup shredded lettuce4 frozen falafel balls (about 66 grams)2 tbsp hummus
Rinse the quinoa, place in pot with water. Bring to boil, simmer 15 minutes. Set aside to cool.
Meanwhile, stir-fry the frozen falafel balls, mashing as you go, until it is cooked and in little pieces.
Mix the cabbage and lettuce. Toss in the cooked quinoa and the falafel balls, mix well. Top with the hummus.
