1/8 cup olive oil 1 cup thinly sliced white onion2 tablespoons minced garlic 3 28oz cans diced tomatoes (with liquid)1 cup roasted red pepper strips, drained2 ½ cups dry white wine 2 cups low-sodium vegetable stock2 cups sliced stuffed green olives ¾ cup drained capers ¼ teaspoon red pepper flakes 12 (6 ounce) fillets cod or halibut2 tablespoons unsalted butter¾ cup chopped fresh cilantro
Heat oil in a large skillet over medium heat.
Add onions and cook, stirring, until soft, about 10 minutes.
Stir in garlic and sauté 1 minute.
Add tomatoes, red peppers, wine, stock, olives, capers, and red pepper flakes. Heat to a simmer, cook 5 minutes.
Place fish into sauce.
Cover, and gently simmer for 10 to 12 minutes or until fish flakes easily with a fork.
Transfer fish to a serving plate, and keep warm.
Increase the heat, stir in the butter and boil until the sauce thickens, about 10 minutes.
Stir in cilantro. Serve sauce over fish.
Makes 12 servings, 1 fillet each.
