Mixed greens with tofu, roasted beets, and feta

Ingredients
2 pkgs. of 8 oz extra firm tofu-fry in 2 tbsp vegetable oil until crisp/chewy6 beets-chop into cubes and roast in 2 tbsp oliveoil1 C feta Lots of spring mix lettuce Toss with your favorite home made vinegrette (I use a basic mix of 1/2 C olive oil, 2 tbsp balsamic, 1/4 tsp dijon, 2 tbsp lemon, salt, pepper, 2 cloves minced garlic) I don't toss the entire salad on this, I just plate the salad and drizzle over.
Directions
Mix everything together, drizzle with dressing and serve. Make sure your beets are roasted until they're chewy and don't take skins off. Makes them extra chewy.
