Lentil, Potato and Chicken Sausage soup

Ingredients
16 oz. bag of lentils, rinsed well2 large onions, chopped1 C diced celery2 Tbsp. Olive Oil1 lb. Chicken Sausage, organic, sliced6 Medium Red Skin Potatoes, sliced in cubes7 C Chicken Broth, low sodium2 chicken or beef bouillon cubes dissolved in hot water1 C water if needed
Directions
Place OO in large soup pan and heat.
Add chopped onion and sliced chicken sausage.
Cook until tender.
Add garlic and celery.
Once tender, add potatoes diced up.
Add lentils, stir.
Add remaining ingredients, bring to a boil.
Reduce heat and simmer for 40 minutes+ until lentils and potatoes are tender.
Let sit and cool for 5+ minutes
Serve and enjoy!
