Brown rice, chicken and vegetable casserole

2 cups Brown Rice, long grain, uncooked4 cups Water1 cup Chicken Broth or Bouillon, 2 garlic cloves, finely chopped1/2 cup Onion, chopped 1 cup celery, sliced 1 1/2 cup carrots, thinly sliced1 1/2 cup, Broccoli crowns, broken into small pieces1 cup Cauliflower, broken into small pieces8 oz Chicken breast, cooked and cubed1 can Cream of Chicken Soup1 tsp Mrs. Dash (R) Original Blend1 tsp Black Pepper
Bring the water, chicken broth, garlic to a full boil. Add brown rice, cover and simmer on low for 45 minutes. Meanwhile chop, slice or otherwise prepare vegetables and chicken. Mix all ingredients together in large, covered oven proof casserole dish. Bake approximately 30 minutes in 375 degree oven until vegetables are tender.
