Eggplant Patties

Ingredients
1 med-sized eggplant Water1/2 tsp. salt1/4 tsp. garlic powderFreshly ground black pepper1/2 cup bread crumbs2 tbsp. parmesan cheese1 egg, slightly beaten olive oil
Directions
Rinse eggplant. Do not peel. Remove green top. Then dice in small amount of water. Cook until steaming, then reduce heat to low to finish cooking. Cook until eggplant is soft. Drain, reserving juice. Add 1/4 cup liquid back to eggplant. Add salt, garlic powder, pepper, bread crumbs, parmesan cheese and egg. Mix together.

Heat skillet with enough olive oil to lightly cover surface until hot. Spoon mixture into skillet making serval small patties. Fry until lightly browned. Then turn and brown the other side.
