Creamy Chicken Enchiladas

Ingredients
3 B/S Chicken Breasts, Diced10 Corn Tortillas1 Green Pepper, chopped1 Onion, chopped1/4 cup Salsa1 T Olive OilSalt1 T Cumin1 T Lime Juice1 Cup Shredded Cheddar Cheese1 Cup Tomato Sauce1 T Chili powder
Directions
Preheat oven to 450°. Cook chicken, peppers and onions in olive oil. Add salt to taste and cumin and lime juice. Cook until chicken is done. Add neufchatel and salsa and cook on medium until cheese is melted. Line bottom of 8 x 12 baking dish with 5 tortillas. Add chicken mixture and top with remaining tortillas. Mix chili powder and tomato sauce and pour over tortillas (or use enchilada sauce). Add shredded cheddar and bake until cheese melts (approx 20 minutes). Serve with sour cream.
