Apple Chive Chicken Salad

Ingredients
2 Chicken Thighs2 Chicken Drumstick2 oz. Oikos Organic Greek Yogurt, Plain 4 tbsp. Fresh Chives1/4 cup Cranberries, dried, sweetened (craisins)1/8 cup Pumpkin Seeds1/2 Granny smith apple
Directions
Poach chicken, then remove skin and bones and shred. Diced green apple and soak in water with sugar and lemon juice for 5 minutes. Mince chives. Toast pumpkin seeds. Drain apples, then combine them with chicken, pumpkin seeds, chives, and cranberries. Mix in yogurt, then add salt and pepper to taste.
