Braised Pork Chops

4 4oz Pork chops, boneless, trimmed of excess fat1Tbsp Olive OilSauce Ingredients:2 tsp. Dijon Mustard4 Tbsp Red Wine Vinegar2 Tbsp Soy Sauce2 Tbsp Worchestershire Sauce1/3 cup packed Brown Sugar1/4 cup water
Heat olive oil in a large frying pan on med-hi heat
Mix together all sauce ingredients in a bowl, set aside.
Brown the pork chops on each side for 2-3 minutes
Pour the sauce into the frying pan and let cook on med-high setting for about 1 minute.
Turn down to low heat and allow the sauce to simmer for 40 minutes. If you have thinner than 1" chops I would check the temperature after about 25 just to be safe.
The porkchops come out tender and the sauce turns into a kind of glaze. I actually usually make double the sauce because it is so good on a side of roasted or mashed potatoes.
