Vegetarian Banana Raspberry Oatmeal Pancakes

1/2 Cup Whole Ground Millet Flour1/2 Cup Unbleached All-Purpose Flour2 Tbsp. Whole Ground Flaxseed Meal3 Tbsp. Oats1/4 Tsp. Sea Salt1 1/2 Tsp. Baking Soda1 Tbsp. Stevia2 1/4 Tsp. Egg Replacer3 Tbsp. Warm Water2 Tbsp. Canola Oil1 Cup Plain Soymilk1 Small Banana, Mashed1/2 Cup Raspberries (fresh or frozen)
1. Mix first 7 ingredients together in a medium bowl.
2. In a small bowl whisk together warm water and egg replacer until dissolved and foamy.
3. Add egg replacer mixture and the rest of the ingredients with dry ingredients until just mixed, batter will be lumpy.
4. Spray griddle or pan with non-stick spray and heat on medium-medium high heat. Use a ladle to pour batter onto hot pan and cook on first side until bubbles form on top, then flip and cook for a few minutes more/until bottom is golden.
